Welcome to the Prescott Lab!

Our lab researches the application of policy, systems, and environmental (PSE) approaches to promote diet quality and environmental stewardship where people live, learn, work, and play. Our research sits at the intersection of diet and sustainability.

Why PSE’s?

PSEs modify the areas where we live, work, and play to make healthy choices practical and available to all people. PSEs can impact large numbers of people, and many PSE interventions can be implemented at little to no cost. PSEs can be coupled with education or clinical interventions to further increase the likelihood of behavioral change and further promote health equity and environmental sustainability.

Here are some examples of PSE projects that our lab is working on:

Policies: Share Table Policies, Seated Lunch Time Policies

Systems: Food System Education, Agent-Based Modeling of School Nutrition Program, Household Food Waste

Environmental: School Meal Nudges, Food Access Programs (i.e. Pantries, etc.)
