Application of nutrition principles to needs assessments, program planning, delivery and evaluation in local, national, and international settings using behavioral theory frameworks.

FSHN 499 Nexus of Food, Environmental Sustainability, and Health:

Evaluate the evidence behind controversial topics related to the intersection of food, environmental sustainability, and human health using interdisciplinary and systems perspectives.

Offered every other fall semester, in even years

NUTRS 510 School Nutrition Programs and Policies:

Evaluation of the existing evidence behind federal school nutrition programs and policies and overview of relevant federal policies.

Offered every 3 years
